BILL&COO grows leadership team ahead of the 2024 season

BILL&COO, the five-star luxury hotel collection in Mykonos, has announced key appointments to its leadership team, welcoming Michael Metaxas as the General Manager and Aggelos Bakopoulos as the Executive Chef.

An exceptional hotelier with a wealth of global experience, Metaxas is excited to bring a fresh perspective to the brand, continuing to grow and develop the boutique properties’ esteemed reputation.

Most recently at Brown Hotels Greece, Metaxas has a diverse and rich background with more than 20 years of international hospitality experience, including senior positions at Anassa Cyprus, AngsanaCorfu Resort & Spa and Nous Santorini.

“I am thrilled to be joining the group,” said Michael Metaxas. “My vision for the future is focused on growing BILL&COO and its reputation as the island’s most sought-after luxury destinations.”

Aggelos Bakopoulos has big plans for the upcoming season, introducing three new concepts across both properties. To support the openings, Bakopoulos has assembled a dynamic team of experienced chefs, including two newly appointed head chefs at The Coast and BILL&COO.  

Self-proclaimed ‘gastro tourist’ Bakopoulos said, “It is a great joy and huge responsibility to take on this new role. The collection has a legacy of culinary excellence and I look forward to continuing this while adding my own unique spin, inspired by my Greek heritage”.

New Executive Chef Aggelos Bakopoulos

Aggelos Bakopoulos started his career over 8 years ago at Doryssa Hotels in Samos, where he led a team of 80 as the Executive Chef. He went on to work for Katikes Group as Culinary Director and the Lesante Cape Hotel in Zakynthos. Bakopoulos has been awarded at major Greek culinary institutions, including the Golden Caps and FLAG Restaurant Awards.
