Dorchester Collection has announced the appointment of Tristan Delaittre as general manager of Rome’s Hotel Eden, effective from October 01, 2026. Having held senior leadership positions across Dorchester Collection for more than seven years, Delaittre joins Hotel Eden as Rome continues to strengthen its position as one of Europe’s leading luxury destinations.
With extensive experience in luxury hospitality, hotel operations and gastronomy, Delaittre takes on the role at Hotel Eden following his most recent position as Dorchester Collection’s corporate director of food and beverage. In this position, he has overseen the food and beverage strategy across Dorchester Collection’s ten hotels, shaping the brand’s vibrant dining destinations and led the development of new concepts for upcoming hotel openings, including The Alba in Dubai (2028) and Tokyo (2029).
Prior to this, Delaittre served as food and beverage director at Dorchester Collection’s Le Meurice in Paris, where he directed operations across the hotel’s acclaimed restaurants, bars, events and in-room dining, including the two-Michelin-starred Restaurant le Meurice Alain Ducasse and Cedric Grolet’s celebrated pastry boutique.
Before joining Dorchester Collection, Delaittre’s career took him through luxury hotel, revenue and culinary operations across Europe.
Philippe Leboeuf, chief executive officer of Dorchester Collection, said: “We are delighted to appoint Tristan Delaittre as general manager of Hotel Eden. Having spent more than seven years with Dorchester Collection, Tristan has a deep understanding of our culture, values and commitment to exceptional guest experiences. His collaborative leadership, passion for hospitality and dedication to excellence make him ideally placed to lead Hotel Eden and its talented team into the future.”
Poised above the Spanish Steps, Hotel Eden is a landmark of style and warmth that redefines modern Italian luxury in the heart of Rome. The hotel features 98 light-filled rooms and suites, many with sweeping views over the city or Villa Borghese. Rooftop dining includes creative modern cuisine at La Terrazza and relaxed Roman dishes at Il Giardino, while The Eden Spa offers private treatment suites, a relaxation lounge and fitness studio.
Commenting on his appointment, Delaittre said: “I am honoured to take on the role of general manager at Hotel Eden. Throughout my time with Dorchester Collection, I have admired the hotel’s distinctive character, rich heritage and remarkable team. Rome is enjoying an exciting period of growth as a global luxury destination, and Hotel Eden continues to set the standard for exceptional hospitality in the city. I look forward to working alongside our talented colleagues to build on the hotel’s legacy and create memorable experiences for our guests.”
