WeWantMore has completed the redesign of the breakfast area at Novotel Brussels, transforming it into a flexible, family-focused interior that evolves throughout the day.
Rooted in the hotel’s proximity to Brussels’ Grand Place, the design draws inspiration from the city’s iconic Flower Carpet, a biennial event that temporarily transforms the square into a vivid floral tapestry.
Located within the hotel’s ground floor, the redesigned space complements Novotel Brussels’ recently renovated lobby while introducing a warmer, more expressive atmosphere. By day, it functions as a welcoming breakfast area for families.
By afternoon and evening, it becomes Zinnia Events, an exclusive-use event space conceived in collaboration with WiZiU, designed to host a wide range of gatherings.
“WeWantMore transformed our breakfast area into a space that delivers real business impact. Morning operations are now clearer and more efficient, the space transitions effortlessly into an event venue, and it generates incremental revenue through Zinnia. Most importantly, the redesign has led to a measurable increase in our RPS (reputation performance score) scores related to the breakfast experience—proving that strong design directly enhances both guest satisfaction and performance. This is flexibility that truly pays off,” says Rémy Merckx, Vice President of Operations at WiZiU.
Designing flexibility for daily use and events
From the outset, flexibility was central to the brief. The breakfast area needed to support high daily use while allowing for an easy transition into an event venue. Clear circulation, stroller-friendly layouts, and family-oriented seating informed the spatial organisation, while adaptable furniture enables quick reconfiguration throughout the day.
Translating a cultural reference into space
For WeWantMore, the Flower Carpet served as a recurring cultural reference rather than a literal motif. Its layered, in-progress character informed a design language that unfolds gradually across the interior. A restrained architectural backdrop of soft greys, arches, and warm metallic accents references the surrounding architecture of the Grand Place, while controlled floral colour accents bring the space to life.
Organic lines, petal-shaped acoustic elements, and saucer-shaped lights made from recycled materials introduce softness and improve acoustics. Artworks echo the arched windows, framing floral compositions behind cathedral glass. At the buffet and host stand, 3D-printed floral legs add a tactile, crafted detail, while flower-embellished curtains can be drawn to close off the kitchen— transforming the buffet counters into a bar for evening events.
A space rooted in Brussels, designed to evolve
The result is a calm and adaptable interior that moves naturally from family-focused mornings to social evenings. By combining operational flexibility with a strong sense of place, the redesigned breakfast area offers Novotel Brussels a versatile environment that feels distinctly Brussels while remaining true to Novotel’s clear and understated design language.
