Black Briar has opened in Chicago – a bold American restaurant from chef Jimmy Papadopoulos and co-owner/operator Tim Anderson.
Black Briar is designed to feel both steeped in history and effortlessly inviting, with a timeless character. Karen Herold of Studio K Creative designed the space, where weathered finishes, patinated details, and subtle industrial accents come together in a sophisticated setting. Warm brass lamps and eclectic antique fixtures illuminate the moody dining room, highlighting floor-to-ceiling apothecary shelves stocked with spirits and provisions. Seating approximately 110 guests, the restaurant is designed to offer a variety of intimate and communal experiences while maintaining a sense of character throughout.

At the heart of the restaurant is a glowing 20-seat central bar and wraparound liquor display, creating a welcoming focal point. The layout accommodates a range of dining experiences for any occasion, from classic dining tables and cozy U-shaped booths to a casual counter-height section and quieter, tucked-away corners. At the entrance, guests are welcomed at a striking host station crafted from an antique butcher block sourced from Argentina, complete with a hand-carved steer’s head at its center. From first glimpse to the layered details within, every element of Black Briar is designed to create a welcoming, warm environment rooted in comfort, character, and craft.

“Authenticity has been one of our north stars from the beginning,” said Tim Anderson, co-owner/operator.
“After a combined 40 years in this industry, this is an opportunity to create something that feels genuinely like us, a comfortable space where people can connect. We wanted every element, from the food and drinks to the hospitality, to reflect who we are. Hopefully, you leave feeling like you experienced something special.”
